Winston Matthews and his brother Miles, Head Chef of
RED bring a
wealth of experience to their roles. Winston was
trained at Westminster College attaining best
overall Student. He has held senior positions at the
Ritz and the Dorchester Hotel. In 1992 he opened Le
Palais du Jardin in Covent Garden as Executive Head
Chef. His many awards and achievements include The
William Heptinstall Scholarship 1986, semi finalist
Roux Scholarship 1990, 1991, and 1992, semi finalist
Young Chef of the year 1990, and Finalist Acadamie
Junior chef of the year 1990. |

In
1997 Le Palais du Jardin won best Brasserie
Restaurant in the 1st Carlton TV Awards. Miles was
Head Chef of the Tasis American School and he joined
Winston at Le Palais du Jardin as Head Chef for 4
years. Winston and Miles opened
RED in 2001 and
relocated to Weybridge in 2005. |

The business is backed
by our sister Sally (book keeper), Mum and Dad and
is truly a family business. We are ably supported by
key members of staff including Tom and Barney who
have been with us since RED
